Coconut cream, canned200 g
Coconut water or coconut milk (from a bottom of canned coconut cream)20 ml
coconut flakes, long cuthandful

How to make it:

  1. Open a can with coconut cream and transfer coconut cream carefully into a bowl by using a spoon
  2. on a bottom of serving glasses, add goji berries, some raisins and pour some coconut milk (which normally appears on a bottom of a canned coconut cream)
  3. add some date syrup (do not mix)
  4. layer-by-layer, add coconut cream, date syrup, raisins, then coconut cream, date powder, chocolate pieces, again coconut cream, date syrup, etc. It is ready!

Ingredients

chestnuts, canned or cooked200 g
tomatoes, dried and in oil100 g
green sweet peas (fresh or frozen)100 g
fresh herbs (oregano, mint, basil)handful
vegan mayonnaise (optional)
home-made rye bread (optional)

How to make it:

  1. Smash chestnuts with a fork, but do not make smoothie from it: leave some pieces bigger, some smaller
  2. Cut dried-in-oil tomatoes and add to chestnuts
  3. Add green peas. If using frozen – put it into hot water for 1 min and drain
  4. Wash, cut herbs and add to the salad
  5. Serve with vegan mayo and rye bread. It is ready!

Important to know:

  • Rye bread, home-made from whole grains (not using any flour) is a super food, releasing constipation and contributing to gut health
  • Ingredients of the vegan mayonnaise which I bought (honestly, the taste is amazing, much better than any egg-based mayo I have ever tried): water, rapeseed oils, mustard (water, spirit vinegar, mustard, sugar, salt), sugar, modified crust, thickeners: xanthan gum, guar gum, spirit vinegar, salt, antioxidant: E385, colorants: carotenes. No preservatives
  • E385 is calcium disodium EDTA, commonly used as a chelating agent, preservative and antioxidant (to prevent oxidation by chelation) in canned food. It stabilizes food by binding with free polyvalent metal cations (1). Preservative! On the label it is written that there are no preservatives, have you noticed?:)
  • For me, this is some kind of transitional food, because:
    • consumption of tomatoes is highly limited in my food ration
    • mayonnaise, even if it is vegan and super well done with good ingredients – it is still some kind of unnatural food for the human…

Overture

The passion for food is deep and strong, passion for tasty food is unlimited. Here is one of the “I can’t stop eating it” recipes. Marinated mushrooms prepared in hours and eaten in minutes!

P.S.

The passion to go deep into a structure of words sometimes bring funny conclusions. For example, the word “mushroom” for me consists of two words: first one is “mush”, which means “a soft, wet, pulpy mass”, and second one is “room”. So, my unofficial version of the origin of the word “mushroom” is just a room for a soft pulpy mass. Funny, isn’t it?:)

Mushrooms Agaricus bisporus1 kg
Olive oil200 ml

How to make it:

  1. Wash mushrooms and cut them into 4 slices along
  2. Peel and mince garlic
  3. Put into a pot (capacity 2 liters or more) olive oil, apple vinegar, salt, sugar, pepper, allspice and bay leaves
  4. Bring the mixture to boil, but on a low or medium heat. The mixture should not be crazy boiling, just catch first bubbles and
  5. Add minced garlic first, count till 10 and add mushroom slices. No way for garlic to over-burn!
  6. Cover a lid of a pot and bring the mushroom-in-marinade mixture to a boil (that will take approximately 5-7 minutes), again, on low or medium heat. Do not allow the mixture to get crazy with boiling bubbles!
  7. Mix everything time to time and you will see that the excess of liquid will appear in a pot, as mushrooms will release their water content
  8. When the liquid will start to boil, let it boil slowly for 5 minutes
  9. Remove a pot from fire and let it cool down for 1-2 hours with a lid open
  10. Transfer marinated mushrooms with marinade into clean and dry glass jars (0.2 – 1.0 liter size, as you prefer)
  11. Let the jars stay in a refrigerator for at least 4 hours or even overnight
  12. Serve with a piece of rye bread. It is ready!

Important notes:

  • Marinated mushrooms are good to eat within 7 days, if prepared according to this recipe (in my case, they never stay longer than 2 days, just crazy tasty:))
  • Be sure not to overcook garlic, it should not turn brown after adding into hot oil-vinegar mixture
  • All the procedure of boiling should be very moderate boiling. The idea is to keep it lightly boiling but not crazy boiling. Why? Because crazy boiling affects negatively nutritional value of vegetable oil and mushrooms and could be even not health-beneficial
  • Let the mixture cool well before putting it into a refrigerator – that would allow to avoid condensed water to flow back to the top of marinated mushrooms, also, hasty changes in temperature lead to food nutritional destruction and sooner spoilage, Be patient!:)
  • When taking marinated mushrooms out of refrigerator sometimes you could notice that oil has turned in solid – no worries – just let a jar stay on a counter for 30 minutes, oil content will return as liquid then.

Icy almonds

It is something like ice-cream, but different. Vegan, vegetarian, paleo, maleo, whatever you call it – it is tasty:)

Ingredients:

  • almonds, 1 cup
  • fresh water for soaking
  • fresh water for blender mixing, ratio 1:1 with soaked almonds
  • cane sugar, 2 tsp
  • vanilla extract, 0.5 tsp

How to make it:

  • Soak almonds overnight for 8-12 hours
  • Drain and rinse
  • Measure the amount of soaked almonds and use the same amount of water to blender these two ingredients. For example, you have 1.5 cups of soaked almonds, that means you take 1.5 of water to blender
  • Blender almonds with water on medium-high speed for 2 minutes
  • Drain the mixture through cotton cloth or milk-bag
  • Pour the liquid into a large pot. Large pot is better, even while we have small amount of liquid, because it has bigger surface area of a bottom and therefore simmer process will be faster and even
  • Add sugar and vanilla
  • Simmer the liquid in a large pot for 1 hour, mixing it time to time with a whisk. Heat should be as low as possible! No hurry here!
  • Liquid will start to thicken, so keep on simmer until you will get very thick creamy consistency
  • Remove a pot from heat and cool creamy mixture down
  • Transfer the creamy mixture to ice-cube moulds and freeze. It is ready!
