Three steps – one dinner

Overture

Usually, I would avoid potatoes because it full of starch and gives zero energy to a body (according Ayurveda), but… baby potatoes are young and guiltless. Baby potatoes have very low amount of starch and therefore, in my opinion, are not harmful (or much less harmful) for energy loss. so, summer is a time to enjoy potatoes! (baby potatoes:))

For step 1 (baby potatoes)
Baby potatoes (they are usually available only in summer time)10

Onion 0.5
Ghee butter 2 Tbsp
Black and red pepper corns 1 tsp
Coriander, milled 1 tsp
Galangal 1 tsp
Salt 0.5 tsp
Green chili pepper 1
Garlic cloves 3
Green beans handful
For step 3 (salad)
Cucumber 1
Lettuce leaves handful
Red radish 10

cup US measuring cup, equal to 240 ml of water

How to make it:

  1. Step 1. Baby potatoes (only available at summer time)
    1. Cook baby potatoes in a steamer
  2. Step 2. Garnish
    1. Chop onion and stew it in a pan with a bit of Ghee butter or olive oil (I prefer Ghee) for 5 min
    2. Add black and red pepper corns, coriander, galangal, salt, chopped green chili pepper and stew for another 5 min
    3. Add minced garlic, stew 5 min more
    4. Cut green beans (without edges) into 2 pieces and add to the pan, add some water, close a lid and stew on medium-to-low heat for 10 min
  3. Step 3. Salad
    1. Chop cucumber and lettuce leaves
    2. Grate radish, leaving the ends of it not grated. No need to grate fingers!:)
    3. Mix all together. It is ready!

Important to know:

  • Grate radish, leaving the ends of it not grated. Yes, radish could be grated not in equal pieces, what’s a problem? The most important moment is not to cut the fingers with grater! When you mix a salad ingredients all together – the taste is the same, or could appear as more interesting

  • Do not peel the skin of baby potatoes, just wash it thoroughly with water and brush

  • Follow a set of species in this recipe for not to make all the dishes you cook to taste similar
Tasty process:) I have bought my new high quality pan from a friend of mine. She has plenty of them, me – only one:) I like it, super good choice!
  • I was cooking this dinner yesterday. You see, all the ingredients are for one person, because… because I was fasting yesterday. So, the dinner was exiting, but not for me that time, I was fasting…:)

Overture

Last year we walked through the mountains all days long. In the evenings, we were coming back to our place which was equipped with a small kitchenette.

What food to prepare when all of your favorite and most important kitchen utensils left at home? Of course, – salad:)

Two versions are available, for warm and rainy days. Because mountains are like this – one day it is sunny, another day it is drizzle, rainy and cloudy mountain mood.

TWO VERSIONS:

1) for warm days to refresh a body

2) for cold days to warm a body – with smoked goat cheese

Jalapeno peppers, pickled5-10

smoked goat cheese (for 2nd version of the salad)2-4 slices

How to make it:

  • wash, remove seeds and cut into pieces pepper
  • wash and cut lettuce
  • remove seed from Jalapeno peppers, cut into two pieces
  • cut corns from a cob
  • mix all veggies together
  • add warm sliced goat cheese (preheated in a microwave or an oven)

Latest sketch of lentil soup could provoke a joyful whoop!

Because of my transformation to Nature-food has started from 2019 January, many aspects of live within these days, including self-isolation, are so easy-go and even joyful for me and my family. We take a time to relax, to spend time together, to clean our space, to create, to write, to paint, to cook, and of course to eat, but just a simply food:)

The story of the lentil soup in my kitchen is so successful, that I definitely need to share the recipe with my readers:) Before 2020, when time to time we had guests at our home (the restaurants were open than, right?:)), the rooted meat-eaters have told me – that that is the best soup ever. No meat is there, and bliss comes into the body and mind. Time to try this soup, it is a Lent time for everyone now:)

Ingredients:

  • White onion, 1 pcs
  • Clarified (Ghee) butter, 50 g
  • Fenugreek seeds, freshly milled, 2 Tbsp
  • Red lentils, 0.5 cup
  • Water, boiled, 2 cups
  • Salt, 1 tsp
  • Staghorn sumak, 1 Tbsp
  • Lemon, 1-2 pcs
  • Peppermint leaves, fresh

How to make it?

  • Wash red lentils in running water until water is clean
  • Soak red lentils in 1-2 liters of fresh water overnight or at list for 8 hours
  • After soaking lentils, rinse it once again in fresh water and drain
  • Cut onion into pieces and sweat with butter in a soup pot until onion is translucent
  • Add milled fenugreek, sweat for few minutes more
  • Add soaked red lentils and stew for 5 min more
  • Add hot boiled water, stir well, bring to a boil, close a pot lid and simmer for 15 min
  • Cool down the mixture, add salt and mix in a blender for 1-2min
  • Serve with lemon pieces, fresh mint and sumak

Important note! In the original version of the lentils soup, which I found to be a traditional Turkish soap, wheat flour is usually being used for sweating the onions. As I avoid any kind of cereal flour as much as possible (mostly in 99%), I replace flour with milled fenugreek seeds. I found milled fenugreek to be a good replacement for flour by texture (for this specific recipe) and more beneficial in terms of nutritional impact. Anyway, a year ago the recipe of traditional Turkish lentil soap has opened me a new era of tastes:)
